Caesar Dressing

This caesar dressing uses cashews for creaminess, nutritional yeast for a cheesy flavor, and seaweed to mimic the anchovy taste found in traditional caesar dressings. The flax seed helps with emulsification and adds omega-3 fatty acids.

In a high-speed blender, combine:

   - 1/2 cup water

   - 1 cup organic cashews (soaked for 2-4 hours if not using a high-speed blender)

   - 1/4 cup organic lemon juice

   - 2 tablespoons soluble tapioca fiber

   - 2 tablespoons unfortified nutritional yeast

   - 1 tablespoon liquid aminos

   - 2 cloves organic garlic, peeled

   - 1 teaspoon organic onion powder

   - 1/2 teaspoon organic mustard powder

   - 1 tablespoon dried seaweed (crushed or flaked)

   - 1 tablespoon organic flax seed

   - 1/4 teaspoon organic black pepper

 

2. Blend all ingredients on high speed until smooth and creamy, about 1-2 minutes.

 

3. If the dressing is too thick, add water a tablespoon at a time until desired consistency is reached.

 

4. Taste and adjust seasoning if needed. You may want to add more lemon juice for acidity or liquid aminos for saltiness.

 

5. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld.

 

6. Shake well before use. The dressing will keep in the refrigerator for up to 5 days.

Balsamic Dressing

This balsamic dressing uses raisins for natural sweetness, almonds and sunflower seeds for creaminess and body, and garlic and onion powder for savory depth. The balsamic vinegar provides the characteristic tangy flavor.

  1. In a small bowl, combine:

    • 1/4 cup organic raisins

    • 1/4 cup organic balsamic vinegar

    • 1/4 cup water

  2. Let this mixture sit for about 15 minutes to soften the raisins.

  3. In a high-speed blender, add:

    • The raisin, balsamic vinegar, and water mixture

    • 1/4 cup organic almonds

    • 2 tablespoons organic sunflower seeds

    • 1 clove organic garlic, peeled

    • 1/2 teaspoon organic onion powder

    • 1/4 teaspoon organic spices (such as a mix of dried basil, oregano, and black pepper)

  4. Blend on high speed until smooth and creamy, about 1-2 minutes.

  5. If the dressing is too thick, add water a tablespoon at a time until you reach the desired consistency.

  6. Taste and adjust seasoning if needed. You may want to add more balsamic vinegar for acidity or spices for flavor.

  7. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Vinaigrette Dressing

This vinaigrette uses nuts and seeds for creaminess and body, raisin paste and maple flavor for sweetness, and balsamic vinegar for tanginess. The shallots and garlic add depth and savory notes.

    • 1/4 cup water

    • 2 tablespoons organic raisin paste

    • 1/4 cup organic balsamic vinegar

    • 2 tablespoons organic walnuts

    • 2 tablespoons organic cashews

    • 1 tablespoon organic sunflower seeds

    • 1 small organic shallot, peeled and roughly chopped

    • 1 clove organic garlic, peeled

    • 1/4 teaspoon organic natural maple flavor

  2. Blend on high speed until smooth and creamy, about 1-2 minutes.

  3. If the dressing is too thick, add water a tablespoon at a time until you reach the desired consistency.

  4. Taste and adjust flavors if needed. You may want to add more balsamic vinegar for acidity or maple flavor for sweetness.

  5. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld.
